Stovetop Apple Pancake

minutesYou can make a large apple pancake right on the stove! The key is to cook it on medium-high heat (6 out of 9 on my stove) rather than high heat. I’ve listed this recipe as 2 servings due to the calorie content, but feel free to indulge in one serving if you’re really hungry! This time, I used an Envy apple, which was flavorful and maintained its texture well during cooking. To enhance the dish, I add a splash of Cognac—just watch out for the flames if you’re using a gas stove, or alternatively, remove the pan from the heat before adding the brandy. Top your pancake with syrup, whipped cream, or your toppings of choice. Enjoy!
Ingredients
Main Batter:
¾ cup of flour
1 teaspoon of baking powder
1 tablespoon of sugar
¼ teaspoon of salt
½ cup of milk
1 tablespoon of melted butter
1 large egg
Apple Frying:
1 large apple
2 tablespoons of butter
1 teaspoon of cinnamon
1 teaspoon of sugar
1 tablespoon of Cognac or other brandy (optional)
Final Preparation:
1 teaspoon of vegetable oil
Powdered sugar, cinnamon, maple syrup for garnish
Directions
- Sift together flour, baking powder, 1 tablespoon sugar and salt in a bowl.
- Add the egg, milk, 1 tablespoon melted butter and mix until just combined. The batter will be thick. Small lumps are okay. Set aside to rest while you prepare the apple.
- Peel, core and chop the apple – rough cut or large dice is fine.
- Heat a skillet over medium heat.
- Add 2 tablespoons butter and the chopped apple. Cook over medium heat for 5 minutes
- Lower heat to medium-low. Add one teaspoon cinnamon and one tablespoon sugar to the apples. Cook an additional 5 minutes.
- Remove the pan from the heat and add Cognac or brandy if desired. Allow the mixture to cool for 3 minutes. Add the apple and sauce to the pancake batter, folding in just until combined.
- Heat a non-stick pan over medium-high heat. Add 1 teaspoon vegetable oil, then all of the batter. Cook 4 minutes, checking to make sure the bottom side does not burn.
- When the bottom and edges are browned, and bubbles are seen throughout, carefully flip the pancake. Continue cooking on the other side for an additional 2 minutes, checking to make sure you’re not burning the pancake.
- Remove from the pan and serve on a plate with a dusting of powdered sugar and cinnamon. Add maple syrup and/or whipped cream at your discretion!
